I randomly found out about Aviasim and they were not super available, but I ended up lucking out with a couple of slots on a monday when they are sometimes closed so the schedule was more free.
I first did 1h20 in the B737:
After that I went across Paris to the other Aviasim location to do the Airbus A320 and I will admit that it very much preferred its screens, interface and automation. I did a flight from Lyon to Nice and once I got the hang of it, did a nice landing:
